Holidays are definitely the time for families, whether it be Thanksgiving,
Christmas, or even Halloween. So why don't you add some Irish food and fare to your holiday this year?
Colcannon is served on Halloween but is also
very popular year 'round. Another Irish custom on Halloween is to wrap coins in baking paper and place them
in the potato for children to find and keep.
Colcannon |
---------------
1 Head of Cabbage (green)
3 Pounds Potatoes
1 Medium Onion
Butter to Taste
Salt + Pepper
Boil the potatoes, drain and mash well.
Chop up the cooked cabbage and mix in with the mashed potato.
Chop the onion and cook gently in butter until soft, then mix into the
potatoes& cabbage.
Serve in mounds on hot plates, with a well of butter in the middle of each
mound.

Prawn Cocktail |

1/2 Head of Lettuce, torn
1 Stalk of Celery, diced
1 Can Small Shrimp
1 cup Mayo
1/2 cup Ketchup
Juice of 1/2 Lemon
Salt + Pepper
Martini or Wine Glasses
Mix can of shrimp (may use fresh shrimp if you prefer), mayo,
ketchup, & lemon juice. Add salt and pepper to taste.
Place torn lettuce in martini or wine glasses, layer with diced celery & shrimp mixture on top.

Hot Whiskey |

1 1/2 ounces of Irish whiskey (Jameson, Bushmills)
2 teaspoons brown sugar
2 slices of freshly cut lemon
6 cloves
1/2 cup boiling water
Pour whiskey and sugar into a strong
heatproof glass. Embed 3 cloves into
each lemon slice and place in glass.
Add the boiling water and stir until the
sugar has dissolved. Bottoms up!
